Are Restaurants Ripping Us Off?

<p>Do you sometimes wonder if the price we pay for food in restaurants really reflects the materials and labour that goes into putting that food on your plate? In this episode, I have a chat with two friends of mine, Samantha Lam and Benjamin Boudaud who are deep in the hospitality industry in Australia to discuss what the supply chain looks like from farm to plate. We discuss some of the ethical questions that come up in how restaurants – from Michelin star to trendy hipster ones – source and produce food, and specifically the marketing questions and challenges that come up in trying to communicate why food is priced the way it is.</p> <p>Guests:</p> <p>Samantha Lam (<a href="mailto:sammart852@gmail.com">sammart852@gmail.com</a>) has been working in hospitality for 10 years. She studied commercial cookery and went straight into working in commercial kitchens. She got a job working at The Atlantic in Crown Casino in Melbourne, where she met Donovan Cooke, who later poached her to work in his own restaurant Ryne. She and Ben later moved to Cairns for a change of lifestyle and she has decided to work on her front-of-house skills so now works at the Southern Cross Atrium Apartments.</p> <p>Benjamin Boudard (<a href="mailto:BBoudaud@cairnsconvention.com.au">BBoudaud@cairnsconvention.com.au</a>) trained for 6 years in France in the 'art of table' and vocational training, with a baccalaureate in Hospitality – which in France means quite extensive experience in every small job in the industry. His experience covers a wide range of restaurants from catering, to large restaurants, to traditional restaurants, to thematic restaurants. But fine dining restaurants have always held a special place for him. He also worked in The Atlantic (where he met Sam) and also worked with Donavan Cooke at Ryne.
