[…] So as they do it, it allows the the moisture to come out to the skin as it cools, and in the next smoking cycle, they remove that moisture. So it's a pretty cool thing for that. The reason why is it becomes darker, denser, drier, get more of the smoke flavor, and it also becomes a lot more shelf-stable when you smoke it like this. So now you have something that's called Erebushi. This is... No longer a fresh tuna, it's heavily smoked, very dehydrated. The moisture content, which normally a fish is a soft-fleshed animal, is 70% water, like us humans, right? It's now down to 20-28% moisture only. […]
