食物交流與飲食文化 | Food Exchange & Culture Influences
大部分的人都愛吃吃喝喝，享用美食是人類的天性，美食可以在家中廚房餐桌上，在巷口的小吃攤、在街角的便利商店或是旅行地圖上，密密麻麻被標示推薦的餐廳，不過不少食物之所以特別好吃，讓人想吃，甚至想要學著做，並不全然是食物本身，食物之所以吸引人，就算沒吃過也讓人躍躍欲試，可能是它表的時空背景，或許是品牌吸引力或廚師的魅力，一道菜色或食譜，無論是全然創新或是經典復古重現，都可以各自有它的魅力所在，這也是飲食文化能夠有趣，值得愛吃的人花心思探索的動力。 泡在咖啡館裡享受咖啡，很多時候並不是受到杯中咖啡的吸引，可能是咖啡連結了給人放鬆的感覺，或許在那個桌上有一杯咖啡的時空裡，產生了不一樣的感官火花或思緒。鍋爐翻炒咖啡豆的尾聲，會昇華出焦糖氣味，研磨咖啡豆時則讓釋放的氣味更為濃郁加倍，這是嗅覺上的體驗。看著吧台裡的咖啡師，填壓咖啡粉與俐落打著奶泡的肢體身影，是一種視覺上的美感享受，在這樣的氣氛裡，有時就算點來的咖啡不是心中滿分的期待，但我們的情緒已經能夠在那個短暫的時光裡，隨著氣味、空間感與咖啡人的專注，被療育、被撫慰。

食物感官 – 聲音的影響
用餐氛圍裡包含了許多種元素，多數人在視覺上會特別重視的有裝修的整體氛圍、重要擺飾、使用餐具的樣式、燈光明暗與冷暖光線色澤的感受，再細節一點就開始講究餐桌大小，就是來賓坐下來之後彼此的距離，與鄰桌的距離，餐桌該是圓的或方的，是披上純白色桌巾，或是紅白格紋桌巾？之後有聽覺氛圍，例如是否該播音樂，又會是怎麼樣的音樂，音量大小是否合宜，空間的吸音性夠不夠，會不會有回聲共振而容易聽覺疲勞，然後是嗅覺，是聞到餐廳食物味道，還是不會有任何氣味存在未上菜前的空間裡，服務人員是著統一制服，或其樣式與用餐空間是否搭襯….等，這些都是食物的感官。
