How does one shake things up and create variety on a meat only diet?  Well there are many different meats and animal products and countless ways to prepare them.  Today we have Austin Cavelli @QualityCarnivore with us to help us tackle this topic. She is a nationally certified physician assistant and dietary consultant.  She holds a Master’s in Medical Sciences from Cornell and focuses her approach on food quality and bio-individuality. This means taking the “just eat meat” method to the next level with laboratory analysis and a personalized plan tailored to the patient’s specific nutritional needs and health goals.  She has treated thousands of patients with acute and chronic inflammatory diseases, including various autoimmune conditions while also helping many lose weight.  A Questions Answered: What does eating nose to tail mean? What tissues/organs should be emphasized? Why? What are the most important ones people neglect? Some people dislike the taste or even just the thought of consuming various organs/tissues. What are some solutions for people to work around this limitation but while getting the best nutrition possible? Tell us about organ containing dishes and how to prepare them - Changes in texture with different cooking methods as well as a few organ containing dishes (stews, pate, liverwurst, liver & onions) Steaks/chops - Best methods for cooking (grill/pan-seared versus low & slow, concern for histamines, concerns for autoimmune clients), lean vs. fatty depending on goals (weight loss, gaining muscle) Ground meats and burgers.
