Podcast Overview

For the one mother out there who could use some encouragement. Life can be hard - so let's do it together. I'm not here to tell you how to mother - you already know what is best for your crew. I'm here to share my experiences and stories through motherhood and hopefully have enough friends, neighbors, family, church fam, and maybe even some influencers come and be guests to share their own motherhood stories. I am here, whenever you just need to hear another adult for the first time today... even if it is 8pm... I've been there.

Leaving Work to Homeschool

Thank you so much for watching episode twelve of Damalis. I hope you left feeling encouraged and have a smile on your face. If you ever need a friend, I’ll be here when you want to listen. Today’s Mommy Meal: Bacon & Potato Soup Ingredients: 1 T ghee or butter 1 large diced onion (about 2 cups) 8 oz bacon, chopped 5 cups diced white potatoes 3 cups diced carrots, turnips, or combination 2 tsp each sage, rosemary, garlic powder 1/2 tsp paprika 4 tsp salt 4 cups bone broth 4 cups spinach (doesn't reheat well - only use if you're eating this fresh!) 1.5 cups coconut milk (the coconut milk was intentional, it makes the soup! If you'd like to use dairy, use 1 cup milk and 1/2 cup cream) Instructions: 1.) Add ghee, diced onion, and chopped bacon to a hot pan (for Crockpot cooking), large pot (for stovetop cooking), or Instant Pot insert and cook, stirring occasionally, until onion is nearly caramelized (about 10 mins). 2.) Stir in diced potatoes and carrots and cook for another 5 minutes. 3.) Add seasonings, broth, and spinach (transfer to crockpot if using). 4.) Set Instant Pot to manual for 12 minutes and quick release when finished, set Crockpot on low for about 7 hours, or cover and simmer on the stove for 25 minutes or until potatoes are fork-tender. 5.) Stir in coconut milk and serve! Optional: dice two large raw chicken breasts and add them with the potatoes! Add an extra 1/2 tsp salt as well. I’ve also added shredded rotisserie chicken for an easy add!
