(苦味饮料是大人的味道,年龄越长,吃苦越强)</p><p>苦味的生理作用,是帮助识别潜在的有毒分子。并非所有的苦味物质都有毒,但许多毒素,尤其植物的确带有苦味。正因如此,人对苦味极其敏感。哪怕几乎没有感官经验的婴儿,尝到苦味分子时也会本能皱眉;而尝到甜味时则会露出笑容。</p><p>法国人眼里最能吃苦的欧洲人在哪里呢?可能在意大利吧:法国美食家Emmanuel Giraud在他那本小巧的著作《苦味》(Argol出版社,2011年)中,向意大利以及其根植于饮食文化中的苦味致敬:紫洋蓟、浓缩咖啡、红菊苣、蓟芽菜、苦橙……</p><p>“在那里,”他写道,“<strong>苦味</strong>是快乐的、社交的、自然的存在。每一顿饭,它都会登场,从清晨第一杯浓烈的意式特浓唤醒味蕾,一直到夜色中那杯深沉的意式苦酒,人们在饱足之后慢慢啜饮,唇边叼着一根托斯卡纳雪茄,沉入夜的静谧。”</p><p>« Là-bas, <strong>l’amertume</strong> est joyeuse, sociale, évidente, écrit-il.
