8-25-26 – Matt Carroll – Funktastic Meads & Beer in Midlothian Virginia
Tonight we're talking with Matt Carroll, owner of Funktastic Meads & Beer in Midlothian, VA. About 10 years ago, Funktastic Brewing was born, focused on beer and, in particular, utilizing every kid’s cereal you can think of. This was before brewing with kid’s cereal in beer was actually a thing. Then, Matt was introduced to mead, 6 years later. Matt Carroll, Chemist by training and Owner of Funktastic Meads And Beer got his start in the industry as a Home Brewer and Home Meadmaker. As a self proclaimed "beer nerd" he traveled the country visiting as many breweries and meaderies as possible while selling specialty chemicals in the Paint and Ink Market Segments. From homebrew to commercial maker, Matt has always focused on pushing the boundaries in the making of both Beer and Mead. Following the Pandemic, Matt and his wife decided to open Funktastic Meads And Beer (Matt leaving Corporate America behind). In 2019, Matt entered the Virginia Dominion Cup brewing competition and placed silver in two mead categories and gold in two mead categories, also taking Best in Show (Caught in the Rain) for the Mead/Cider category! As he continued to make mead through 2019 and early 2020, he began to realize that this was becoming more than just a hobby, but a daily passion. The thought was, can they make the product commercially if they could find an interested partner? So, after a few meetings with Hahn Fitzhugh and Welsey Fitzhugh Holthausen of Lazy Days Winery, they were set to offer Funktastic Meads commercially in collaboration with Lazy Days. The Fitzhugh’s were great partners and allowed them the opportunity to promote their product in the semi-local market and it was well-received. In April 2021, Matt and his wife Heather made the decision to open their own tasting room and production facility right in Midlothian, Virginia. They feel that Midlothian is an exciting suburb of Richmond and truly look forward to being the first winery in Midlothian. Funktastic is a Nano-Meadery and Brewery located in the heart of Midlothian, VA just south of Richmond, VA. Funktastic focuses on creating Meads with nostalgic and unique flavors in mind. We offer both still and carbonated meads including flavors like F&M Root Beer and Sweetish Fish and many more. We pride ourselves on providing a special experience whether at a market, festival or in our taproom. Join us to listen to Matt tonight! 7-28-26 Clyde and Sarah Hays – Vinland Meads – Murchison TX
7-28-26 Today we'll be chatting with Clyde and Sarah Hays, owners of Vinland Meads in Murchison, TX. Vinland Meads is a family-owned meadery and artisan kitchen in Murchison, Texas, founded by Clyde and his wife, Sarah,. Although the company was officially formed in 2024 and their public tasting room opened in 2026, Clyde's history with mead began more than twenty years ago. He became interested in mead through his love of Scottish and Northern European history, and he mentioned to his grandfather that he wanted to learn how to make it. Rather than giving him a written recipe, he shared stories about how his own grandfather had made mead in Scotland. Those conversations taught Clyde about honey, patience, craftsmanship, and the importance of allowing the process to take the time it needs. He began experimenting from there, and those lessons still guide every batch he makes today. Vinland Meads first began at Hays Manor, our family farm in East Texas. That is where they incorporated the company, developed their recipes, and operated in production-only mode before moving the winery license and public operation into Murchison. Hays Manor remains an important part of their story. It is home to their apiaries, Scottish Highland cattle, farm animals, and the hawks we work with as licensed falconers. Their own bees provide as much honey as they can, and they supplement that with raw Texas wildflower honey from beekeepers whose apiaries and practices they know personally. The farm taught them many of the values that shape Vinland today, especially patience, stewardship, and respect for where their ingredients come from. Sarah and Clyde are also the parents of seven sons, and Vinland has always been a family story rather than simply a business venture. One of Clyde and Sarah's proudest moments is hearing their sons tell people what their family does and hearing the pride in their voices. Sarah is the majority owner, manager, and creative force behind the business, while Clyde serve as Head Mead Maker and oversee marketing. Sarah's belief in what Clyde was creating is one of the main reasons Vinland exists. Years ago, she brought home their first beehives and joked that Clyde would no longer need to buy honey for his mead. Those hives could never produce the thousands of pounds they now use, but they represented Sarah's belief that Clyde's longtime passion could become something much larger. When they moved into Murchison, they wanted to create more than a traditional tasting room. Vinland Meads now includes an artisan kitchen, which focuses on locally sourced ingredients and food designed to pair with mead, as well as the Rose & Raven Bookshop, curated by Sarah. They also host live music, trivia, educational classes, beekeepers’ gatherings, community events, and other experiences that make Vinland feel more like a modern gathering hall than a typical winery. Their goal is to introduce people to mead as a sophisticated and culturally significant beverage, not simply something associated with Vikings or Renaissance festivals. They produce handcrafted meads using Texas honey, locally sourced fruit whenever possible, and a process that generally takes about six months from honey in the tank to mead in the bottle or keg. Every bottle has a story behind it, which is why their tagline is, “Every Bottle a Story. Every Sip a Saga.” Join us to hear more from Sarah and Clyde! 6-30-26 Glenn Lavender – Silver Hand Meadery – Williamsburg, VA
6-30-26 Tonight we're getting together with Glenn Lavender, owner and meadmaker at Silver Hand Meadery in Williamsburg, VA. Glenn Lavender is a musician, mead maker, entrepreneur, and educator who founded Silver Hand Meadery in Williamsburg, Virginia, now in its 11th year. His journey into mead began in an unexpected place: on the road as a touring musician and in the pages of homesteading and historical fiction books, where a curiosity about honey bees and mead grew into a passion for varietal honey, fermentation, and the ancient craft of mead. Through Silver Hand Meadery, Glenn has built one of Virginia's most recognized mead brands, with a mead club of more than 800 members, distribution throughout Virginia including Virginia ABC and Total Wine, and private-label projects for historic institutions such as Colonial Williamsburg and Monticello. The meadery's tasting room and educational space has introduced thousands of people to the diversity of honey, the magic of the honey bee, and the creativity of modern mead making. Silver Hand has recently expanded beyond mead into cider production, continuing its commitment to crafting distinctive fermented beverages. An advocate for mead education and industry growth, Glenn played a pivotal role in helping create the Virginia Mead Trail, supporting the visibility and success of mead producers across the Commonwealth. He has also been a featured speaker at the American Wine Society National Conference (2025) and the North Carolina Winegrowers Association Conference (2026), helping introduce new audiences to mead and its place within the broader world of wine and fermentation. In May 2026, Silver Hand Meadery's mead was served on the Today Show, bringing national attention to America's oldest fermented beverage. Glenn's passion for varietal honey and terroir continues to shape Silver Hand's approach to mead making and education. A lifelong musician, Glenn continues to connect his passions for music, hospitality, and community through Silver Hand Meadery, which has become Williamsburg's home for jazz, hosting regular performances that bring together local musicians and audiences. Whether discussing honey varieties, fermentation, entrepreneurship, or the future of American mead, Glenn's goal remains the same: helping people discover something worth savoring.
