Neben seiner anschließenden Tätigkeit als Zahnarzt absolvierte er ein Studium der Rechtswissenschaften an der LMU München und promovierte an der Universität Augsburg. 2011 gründete er mit seinem Bruder, Dipl.-Ök. Dr. med. dent. Matthias Stelzner, in München eines der ersten zahnärztlichen MVZ in Deutschland. Das Unternehmen AllDent ist mittlerweile an 18 Standorten bundesweit vertreten und beschäftigt rund 2.000 Mitarbeiter (Stand September 2025). Neben der Medizin ist Ruben Stelzner als Autor und Philosoph tätig.
