<p>「荒野のキッチン」番外編1-3</p><p>伊豆・江川酒/わさび沢探訪</p><p>料理家のりこが、後世に残すべき偉大な人々を訪ねる「荒野のキッチン」番外編がスタート！</p><p>今回は、伊豆・万大醸造さんへ江川酒の上槽を見学に！</p><p>さらに、学芸員橋本さんのご厚意でわさび沢へも出向くと・・・？</p><p>----------------------------------------------------------</p><p>【わさび沢探訪】</p><p>学芸員橋本さんがわさび沢をご案内！</p><p>帰り道、思いがけないフィールドワークを経験したのりこは、、？</p><p>-----------------------------------------------------------</p><p>★江川酒（えがわしゅ）</p><p>伊豆韮山・江川家に伝わる日本酒を、令和2年度に発見された文献に従い万大醸造にて再現製造。</p><p>約330年醸造されていなかった日本酒が復活した。杜氏は伊奈静夫氏。</p><p>当時は織田信長、豊臣秀吉、徳川家康などにも愛されたお酒である。</p><p>なお、江川邸（江川家住宅）は重要文化財。</p><p>江川家は42代（900年）続く大和源氏の末裔で、江戸時代は旗本として11代（273年）伊豆の代官を務めた。</p><p>★万大醸造（ばんだいじょうぞう）</p><p>設立昭和10年。伊豆唯一の酒蔵。</p><p>昭和の頃は伊豆に数十件あった酒蔵も、現在は万大醸造のみに。</p><p>自社銘柄清酒「萬燿」だけではなく、「脇田屋」「大沢里」「豊楽」など、伊豆の他社銘柄を継承し、製造・販売している。</p><p>★橋本敬之氏</p><p>伊豆市生まれ。</p><p>静岡県文化課・埋蔵文化財調査研究所に出向後、NPO法人伊豆学研究会理事長、公益財団法人江川文庫学芸員となる。</p><p>勤務の傍ら、静岡県史調査員として調査・執筆に関わり、伊豆地域をはじめ、藤枝市・金谷町などの自治体史編さんにも関わる。</p>
