[…] On top of this, when it's come to the way we wanted to express the local terroir, unfortunately, there is no barley cultivated on these islands. It's made from Japan, but everyone is basically sourcing barley from different places. In our case, it's from Tochigi. But the distiller, Okiyama-san, is also working as a farmer, is cultivating the Hachijo lemon, which are very famous. And he also experimented a bit with different variety of sweet potatoes cultivated on the islands by himself. We've been through the different opportunities, and we realized that the latest potatoes that he's been cultivating were providing an interesting aroma characteristic. […]
