薑絲大腸炸春捲
<p>客家料理(客家菜)教學</p> <p>尋味時刻 Hakka369</p> <p>主持人:邱寶郎、彭月春</p> <p>單元:阿郎哥个私伽菜</p> <p>講客廣播電台 FM105.9/尋味時刻 Hakka369/每週六中午1200-1300</p> <p> </p> <p>《薑絲大腸炸春捲》</p> <p> </p> <p>材料:</p> <p>豬大腸 350公克</p> <p>薑 20公克</p> <p>蒜頭 3粒</p> <p>辣椒 1根</p> <p>酸菜 120公克</p> <p>春捲皮 6張</p> <p> </p> <p>調味料:</p> <p>黃豆醬 1大匙</p> <p>白醋 2大匙</p> <p>砂糖 少許</p> <p>太白粉水 少許</p> <p>香油 1小匙</p> <p>米酒 1大匙</p> <p> </p> <p>做法:</p> <p>1、首先將豬大腸以麵粉或可樂先洗淨,再放入鍋中煮約20分鐘,再取出洗淨沖涼後,再切小塊備用。</p> <p>2、再將酸菜切絲泡水去除鹹味,薑切絲,辣椒與蒜頭切片備用。</p> <p>3、取一支炒鍋先加入一大匙沙拉油,再加入薑絲、酸菜頭與蒜頭與辣椒以中火先爆香。</p> <p>4、最後再加入煮好的大腸與調味料,再以大火翻炒均勻調味勾薄欠(湯汁要多留一些)即可。</p> <p>5、再將炒好的薑絲大腸放涼,再使用春捲皮與炒好的薑絲大腸緩緩捲起,再放入冷凍庫中,急速冷凍。</p> <p>6、最後要食用時在將將冷凍過的春捲放入約180度油鍋中炸成金黃色,至春捲酥脆即可。</p>

客家仙草雞
<p>客家料理(客家菜)教學</p> <p>尋味時刻 Hakka369</p> <p>主持人:邱寶郎、彭月春</p> <p>單元:阿郎哥个私伽菜</p> <p>講客廣播電台 FM105.9/尋味時刻 Hakka369/每週六中午1200-1300</p> <p> </p> <p>《客家仙草雞》</p> <p> </p> <p>材料:</p> <p>大雞腿 2隻</p> <p>新鮮菇 3朵</p> <p>皇帝豆 100公克</p> <p>仙草乾 150公克</p> <p> </p> <p>調味料1:</p> <p>水 1300cc</p> <p> </p> <p>調味料2:</p> <p>仙草高湯 700cc</p> <p>鹽巴、白胡椒 少許</p> <p>紅棗 12粒</p> <p>米酒 1大匙</p> <p>香油 1小匙</p> <p> </p> <p>裝飾物:</p> <p>枸杞 1大匙</p> <p> </p> <p>做法:</p> <p>1、準備好的仙草乾洗淨,再淨泡冷水約30分鐘,再濾乾水分備用。</p> <p>2、再把處理好的仙草放入湯鍋中,再加入調味料1的水,以中小火燉煮約35分鐘,再將仙草乾濾除當作高湯。</p> <p>3、把大雞腿切成小塊狀,再放入滾水中先汆燙過水備用。</p> <p>4、把鮮香菇去蒂,皇帝豆汆燙去外膜,備用。</p> <p>5、取一個湯鍋,再加入做汆燙過的雞腿、鮮香菇、皇帝豆與調味料2的材料依序加入,再以中火煮約25分鐘,起鍋前再加入枸杞裝飾。</p>

<p>客家料理(客家菜)教學</p> <p>尋味時刻 Hakka369</p> <p>主持人:邱寶郎、彭月春</p> <p>單元:阿郎哥个私伽菜</p> <p>講客廣播電台 FM105.9/尋味時刻 Hakka369/每週六中午1200-1300</p> <p> </p> <p>《花蓮煎麵》</p> <p> </p> <p>材料:</p> <p>客家米粉(或油麵) 1把</p> <p>豬絞肉 200公克</p> <p>草蝦仁 150公克</p> <p>雞蛋 6粒</p> <p>客家菜脯 30公克</p> <p>蒜頭 5粒</p> <p>辣椒 1根</p> <p>芹菜 3根</p> <p> </p> <p>調味料:</p> <p>辣豆瓣 1小匙</p> <p>紅麴醬油 1小匙</p> <p>砂糖 1大匙</p> <p>香油 1小匙</p> <p>雞粉 1小匙</p> <p>水 120cc</p> <p>太白粉水 適量</p> <p> </p> <p>做法:</p> <p>1、首先將油麵或米粉過水,再撈起濾水,備用。</p> <p>2、再將草蝦仁洗淨,再切小丁備用。</p> <p>3、客家菜脯洗淨泡水擰切小丁乾,蒜頭、芹菜與辣椒都切成碎狀備用。</p> <p>4、首先將雞蛋敲入米粉中,再攪拌均勻,再放入平底鍋中以中火煎至雙面上色至酥脆狀,再放入成品盤中備用。</p> <p>5、取一支炒鍋先加入一大匙沙拉油,再加入做法2、3的材料依序加入,再以中火爆香,最後略勾薄芡再回淋入煎好的米粉上面即可。</p>
