Animal Kingdom and Epcot, the rides themselves in those parks, I think it's pretty common for most of them to open for early entry. The caveat to that is going to be over at Animal Kingdom, the Safari. I'm pretty sure that normally does not open early. You'll know, you'll check the app. If you start seeing wait times during that early entry time, it's open. You can click on the ride, see hours. But most things at those two parks open early.
