A podcast with an exploration into the nuances of the hospitality industry within Nigeria and the broader Diaspora.
"Setting the standard” is the overarching theme, within this framework, we aim to dissect and shed light on the attributes that distinguish exemplary hospitality. From the intricacies of service delivery to the cultural underpinnings that shape the industry.
Join us for engaging conversations that offer a window into the operational mechanics of hospitality and a thorough exploration of its societal and cultural significance.
To close out season 2, we’re joined by Chef Gibbs, convener of the Nigerian Food Summit (NFS), to explore the vision behind building a stronger and more unified food ecosystem in Nigeria.
Earlier this year, the NFS invited us to host our first-ever live show, so it’s only right we end this season with the brains and muscle behind the movement to unpack its mission.
Chef Gibbs shares how the NFS was created as a platform for us, by us—bringing together chefs, lawyers, brand strategists, educators, and creatives under one ecosystem to elevate Nigeria’s food industry. Through the NFS, he highlights the power of collaboration between government and industry, fostering visibility and dialogue that can transform Nigeria’s food landscape into a sustainable and globally respected ecosystem.

Why Storytelling Matters in Nigerian Cuisine
In this episode, Atim Ukoh, the culinary innovator and educator behind AfroLems, joins Chefs Wu and Chef Vee to explore the power of storytelling in shaping Nigeria’s food identity.
She reflects on how AfroLems began as a personal experiment in Toronto and grew into one of Nigeria’s most influential culinary brands—one that documents, teaches, and reimagines local cuisine.
The conversation traces the evolution of Nigerian food storytelling, from its post-colonial influences to the untold regional dishes that deserve more recognition. Ukoh also shares why she sees food as both culture and communication, how she uses creativity to push beyond convention, and why authenticity must anchor every story we tell.

Food Commentary in Nigeria - Critic, Reviewer or Blogger?
This week, we bring you a topic very close to our hearts..To Blog or Critique.
We take a very constructive look into the current industry by strategically dissecting what it takes to be a credible food critic and a respected food blogger.

What are the similarities and differences? What is it that causes people to confuse the two? And is it even possible for both to be blended into one? We have decided it's time for this discussion to be had by the people you can trust!
