<p>Gilley is the Owner of Lovin’ Spoonfuls and has been vegan for the majority of her life. She's mastered the technique of creating vegan comfort food. She took over Lovin’ Spoonfuls, at 2990 N. Campbell Ave, in 2017 and has kept the restaurant afloat, even during quarantine, in her collaborations with Chef John Paul. Gilley told Prickly Pair Podcast hosts Alexandra Pere and Nicole Feltman that she loves switching people over to veganism and she finds most success in doing it with the buffalo chicken sandwich.</p> <p>“I love getting the older man who has been eating beef every day for 70 years and is like ‘I love this fried chicken, and I am like yes! The restaurant is inspired by all things Southern, like New Orleans cuisine and Southwestern flavors, but don’t expect to find a standard gumbo.
