Miho 住在東京十幾年，去過 500 間以上的咖啡廳。這次她出新書《東京謝謝款待》，從幾千家店裡精挑出 45 間。我們好奇的是——一個把整個東京都掃過一輪的人，她到底怎麼選店的？ 答案有點意外：不是靠味道，是靠氣場。Instagram + 食べログ + Google Map + 每月跑實體書店，先把資料做滿再走進門；進門之後，她用軟硬體兩條標準來判斷：軟體是老闆的個性、空間的溫度、店家讀空氣的能力；硬體是杯盤、BGM、甚至椅子坐不坐得住。 這集她分享了 5 家書裡的私藏：根津的「釜竹」烏龍麵（米其林必比登、老闆從大阪來東京卻只去過一次涉谷）、人形町的「柳屋」天然鯛鯛魚燒（百年老店、《新参者》阿布寬排不到的那家）、藏前疫情時開的咖啡店「Westside」（老闆姓「西方」所以店叫西邊）、東村山市隈研吾設計的「和國商店」（廣島神社回收銅板 + 板金職人折紙鶴藝術）、還有新橋快被拆的大樓裡開了 60 年的「喫茶富士」（從 3000 張飛機俯瞰富士山照片裡挑一張當主視覺）。 最後還有一段很打中我的：Miho 特別寫了三家「已經消失但用另一種形式留下來」的店——食譜讓給徒弟、桌椅讓給新店。一家店關掉，不代表它的生命結束了。 ▍本集聊到 - Miho 的選店 SOP：IG → 食べログ → Google Map → 實體書店 - 軟硬體雙標準：老闆個性 × 杯盤 BGM × 椅子 - 釜竹烏龍麵：隈研吾設計 + 養老院隔壁 + 老闆只去過一次涉谷 - 柳屋鯛魚燒：天然鯛 vs 養殖鯛的一次一隻 vs 一次多隻 - Westside：疫情開的淺焙咖啡 + 姓「西方」的老闆 + 每個客人都目送出門 - 和國商店：板金職人 × 隈研吾 × 廣島神社回收銅板外牆 - 喫茶富士：60 年老喫茶 + 富士宮炒麵 + 3000 張照片選一張 - 為什麼「東京謝謝款待」這個書名值得寫進去 -- Hosting provided by <a href="https://www.soundon.fm/">SoundOn</a>
