This is a hospitality driven podcast and passion project of Stephan Sardi that is created off the idea of giving guests on the show the ability to 86 anything of their choosing. Volume 1 serves as an introduction of the host and creator through the process of opening his second restaurant in Italy, finding a new home, conversations with friends, family and former colleagues from the world of Hospitality. The Pilot volume begins in the summer/fall of 2025 on a stormy drive home from a job in Torino at 4am and goes through the real raw struggle of finally launching in 2026, contains cover songs.
As one of the voices of a generation once said, Mama you've been on my mind... This show started as an idea to create some form of time capsule and creative outlet to express myself, and shine a little light on some cool and interesting people, there is nobody cooler nor braver than my Mom. The whole purpose of this Pilot Volume was to introduce myself through my guests and there is nobody better than our mothers to do such a thing. We put the hospitality talk on hold on this one and tune in to an incredible mothers origin story, it'll make you laugh, cry and possibly get a little angry but this is the first part of the story on how I came to be on this planet. We went through her journey and personal odyssey starting with her turbulent upbringing in Wisconsin, how she became an international model and how it is that our family, our dysfunctional masterpiece came to be and where we are today. Or maybe its the weather or something like that, but mama you're just on my mind..

ep10V1 w/ Silvio Sardi
In the words of the great and powerful legendary producer Rick Rubin "All that matters is that you are making something you love, to the best of your ability, here and now." Ever since I was 18 I've been in love with the world of Hospitality, the brotherhood and community is once that is in my opinion the coolest and among the most inclusive and supportive ones there are. It has taken me from New York, to Miami and back to Italy, it has blessed me with a wife, a daughter and a family that extends beyond blood. As we finally arrive at the final episode of Vol 1, there was nobody better to help me wrap it up then my father, the former Hollywood producer. This episode features the longest conversation I've ever had with my dad, keep in mind we speak in Italian naturally between each other, so doing this in English brought an extra layer of novelty. We went through his childhood, his time in New York in the 80's and 90's, how it is that he became entangled with the movie business and how the crazy idea of starting a restaurant group with his 3 kids came to be. He offered a glimpse into an enormous life that 150 minutes can only scratch the surface, but I am grateful to everyone who tuned in and all the guests that made this happen, and even though I'm sure he still doesn't understand the concept of 86ing completely, but I thank him for contributing to the strong list of 10 that was created on Volume 1. Thank you all once again!
Recorded on August 2026 in the office of Hotel Erbaluce.

ep8V1 w/ Travis Hawse
On this one we are going back in time, back to a time where I still lived in New York and a time where we still had no idea that a Worldwide Pandemic would bring the New York Hospitality machine to a complete halt. We take a trip down memory lane back to one of the most influential bar programs I had ever been a part of, Major Food Groups The Polynesian, my first and most profound exposure to the world of Tiki. On the show is the former head bartender Travis, who took over the program that was on the verge of collapse, we talked about our good and not so good times there and what exactly happened to this rooftop Oasis on the edge of Time Square. We also discussed what brought him to become the Head Bartender of San Francisco's Trick Dog Bar and the experience of winning it all at the 2025 Tales of the Cocktail in New Orleans, as well as an honest conversation about the purpose of Pop Ups, Guest Shifts and Bar Takeovers.
Recorded after a very busy shift on June 2026.

ep7V1 w/ Jose Pimentel
Last but most definitely not least, to complete the starting 5 is Jose or Pepe as some have come to know him. There are people that you will encounter in life that will just put a smile on your face, there are people who you will encounter that are pure hearted and kind, and there are people who are naturally gifted with talent for specific jobs or with specific skills. I have never met someone who possesses all of them behind the bar until I got to work with Jose. (This episode begins with an honest look at my personal struggles with mind altering substances and serves as an example for those who may need it, also if you don't just go ahead and skip the intro on this one) On the show we discussed his origins in Cuba, and how he got to Miami and fell in love with the Bar world, we also talked about a dark day for Italian football, some more awful sports predictions and some more Tip Culture in the Miami Restaurant scene.

ep6V1 w/ David Kovačević
If you've worked in a bar with a medium to large bar team you know the importance of having an enforcer on your side, the one who knows the rules and sees when they are not being followed, the one who sees when a diamond can be made by pressure and when the pressure becomes too much. David is the very best one I've had the chance to work with, a man of few words, but at the same time one of the kindest and most generous human beings I've ever met. On the show we talked about how he went from being raised in Serbia to working behind the bar in Chicago, and what eventually brought him to California and later on Miami, where you can find him at Sunny's Steakhouse.

ep5V1 w/ Jonathan Cano
Next up in the starting 5, was the head of the pack, with Columbian roots but Miami through and through Jonathan Cano has been making a name for himself in the hospitality industry for well over a decade. Currently with the prominent bar programs of the Scapegoat and Maes in the grove, there are few bartenders in the industry that match his drive for giving superior service and thirst for even more bar knowledge then this guy. On the show we talked about the struggles of making cocktails for the Italian palate and the opening the second Sardi's location, as well as Jonathans tour of South American and Mexican bars and his personal impressions of the bar that is being set for hospitality.

(This episode was hit by massive delays because of the amount of time it took to get internet up and running in Borgomasino, and it also was deleted by Capcut multiple times which meant insane amounts of hours were wasted)

ep4V1 w/ Butler Collins
A change in format and preparation? Perhaps, perhaps not. Episode 4 begins the Starting 5 Arc, the best bar team I have ever been a part of starting from 2020 to 2024 at Amara at Paraiso, in the heart of the Covid 19 Pandemic. Butler from North Carolina, brought the southern excellence and charm, we discussed the creation of project drink_clarified and how it evolved from a Milk Punch beach bottle experiment, to bar takeovers and guest shifts and to being sponsored by brands like Brugal 1888, Macallan 12y and No3 Gin. We talked about our time together in Miami, the challenge of taking over the bar program as head bartender of a new generation, and of course a little sports talk with some questionable predictions.
Recorded on December 2025.

The first live hospitality guest, is an OG he started working in restaurants on Washington Avenue in Miami Beach at the age of 16 and was my first exposure to the human capability of carrying 5 plates at the same time. Currently holding down the fort in the big apple since 2018, also happens to be my older brother and completes the brother trilogy of volume 1. This episode begins with a heart scare, takes a dip in the political pool, and dives in to the topic of Tip Culture in America Vs Europe, and much more.
