[…] These bills are not for revenue purposes. Rather, they are backed by selfish interests who would have margarine taxed out of existence, thereby hoping to increase the sale and price of butter. The truth of the matter is, wholesome margarine and butter are equally delicious as a spread for bread and as a fat for cooking. Both have the same food energy content, 3,400 calories to the pound. Yet margarine sells for substantially less than butter, and that is margarine's only crime. It's very great economy. Hence, such taxes would punish millions of low-income families who use wholesome margarine through necessity and thrifty housewives who use it through preference. […]
