In dieser Folge spricht Sebastian Späth mit der veganen Berliner Köchin, Autorin und Aktivistin Sophia Hoffmann: Sophia schreibt Kochbücher, bloggt, hält Vorträge und beeinflusst über die sozialen Medien ziemlich viele Menschen. Ihre Rezepte schmecken nicht nur verdammt gut, sie zeichnen sich auch durch Regionalität und möglichst geringe Lebensmittelverschwendung aus. Seit einem Jahr betreibt Sophia in Berlin zusammen mit ihrer Geschäftspartnerin Nina Petersen das Bio-zertifizierte Restaurant »HAPPA«. Neben pflanzlicher Ernährung setzt sich Sophia auch für Umweltschutz, Nachhaltigkeit, Feminismus und bessere Arbeitsbedingungen in der Gastronomie ein. In der ersten Folge spricht Sebastian Späth mit einem der bekanntesten und innovastiven Köchen Berlins: The Duc Ngo. Der deutsche Koch mit vietnamesisch-chinesischer Abstammung ist 1974 in Hanoi geboren und aufgewachsen und kam im Alter von fünf Jahren als Geflüchteter nach Berlin-Spandau, wo er seine Leidenschaft fürs Kochen entdeckte. Am Tegernsee kochen wir gemeinsam das Rohfischgericht Sashimi, bestehend aus einem Gelbschwanzmakrelen Filet, mit einem Dressing aus Sushiessig und Traubenkernöl. Dazu gibt es Quinoa, Brokkoli, Apfel, Gurke und Avocado als Beilagen. Zutatenliste: Für das Sashimi: Hamachi-Filet, Quinoa, Brokkolistängel, Dashi-Sushi-Essig, Avocado, Kinome-Blätter Für die Rotbarbe: Rotbarbenfilet, Sauce Royal (Rotbarbenleber- und Karkassensoße), Gurke, Lauch, Shiso-Öl, Sisho-Blüten
