<p>Mutfaktan Sesler’in yeni bölümüne Ketojeminik Derneği Başkanı Şeyda Yetgin Gevrek konuk oldu, kendisiyle aile hikayesi ve kendi tecrübeleriyle başka ailelere yol göstermek için kurduğu Ketojeminik Derneği’nin yanı sıra mutfak profesyonellerinin sık sık karşılaştığı önemli bir konuyu, özel beslenme biçimlerini ele aldık. Medikal ketojenik diyetin epilepsi tedavisindeki yerini, bu beslenme modelinin popüler “keto” yaklaşımlarından nasıl ayrıldığını ve özel beslenme ihtiyaçlarına sahip bireylerin günlük hayatta karşılaştıkları zorlukları konuştuk. Bir şef, sağlık temelli özel beslenme ihtiyaçları konusunda ne kadar bilgi sahibi olmalı, günümüzde restoranlar farklı beslenme gereksinimleri olan misafirleri ağırlamaya ne kadar hazır, bir menü oluştururken lezzet ve maliyet kadar doğruluk ve güvenilirlik de sorumluluğun bir parçası mı sorularına yanıt aradık. Ayrıca Türkiye’de medikal ketojenik ürünlere erişim, yerli üretimin gelişimi ve gıda sektörünün bu alandaki rolünü de değerlendirdik. Gastronomi dünyasının yalnızca trendleri değil, farklı ihtiyaçları da anlayabilmesi için ufuk açıcı bir sohbet oldu.</p> <p> </p>

<p>Mutfaktan Sesler stüdyosunu bugün çalışkan arılar doldurdu. House of Hunny’nin hikayesini, kendinizi bu hayalin arkasındaki ruh olarak tanımlayan Balca Alper Picht’ten dinledik.</p> <p>Doğanın bize sunduğu bal mucizesindeki dönüştürücü gücü konuştuk, Balca’nın ailesinin İznik’teki çiftliğinde 2023’te faaliyete başlayan House of Hunny’nin doğaya müdahale etmeyen, yılda tek hasat alan, sürdürülebilir üretim anlayışını dinledik.</p> <p>Paris International Honey Awards ve London International Honey Awards gibi yarışmalardan ödüller alan House of Hunny’nin çalışkan arılarını ve web sitesinde her yılın hasadına ait analiz raporlarını paylaşan şeffaflığını takdir ettik. Anadolu’nun bereketli topraklarında balın markalaşması için eksik olanın üretimden ziyade hikâye anlatımı olduğu konusunda hemfikir kaldık. Arıların bilgelikleri ve çalışkanlıklarından çokça ilham aldığımız bir bölüm oldu.</p> <p> </p>

Profesyonel eğitim alarak sektöre katılmayı planlayan adaylar için rehber niteliğinde bir bölüm oldu. MSA’da yeni dönem 8 Haziran’da başlıyor, sınıflar hızla doluyor. Mutfakta olmak hayali değil mesleği olsun isteyenleri bekliyoruz.</p> <p> </p>
