[…] And if you put a bunch of acid in your mouth, the hydrogens go through that channel, stimulate a nerve. Your brain says, ooh, acid, I'm going to interpret that as sour. And that's sour. You have a salt receptor, saltiness, which does the same thing, but with sodium. So if you put a bunch of sodium in your mouth, your brain says like, oh, that is salty. But sweet is a bit more complicated. It's a protein-based receptor. Actually, it's two proteins that come together in a protein dimer. And when something binds this protein, it opens a channel that allows actually calcium to flow in. There's always calcium sitting around. […]
