[…] And let's say you generate $100,000 in monthly revenue and your all-in labor expense is $35,000. Congratulations, your labor cost is 35%. Simple enough, right? But now I want to ask you a more interesting question. Is 35% good? Is it bad? Is it sustainable? And see, the answer depends on the economics of your business, certainly your market, your concept, all of this. I've got something called the 30, 30, 20 rules. So I generally target 30% for all in labor, 30% for cost of goods sold, which leaves 20% for everything else you spend money on. In the end, that leaves 20% left over in operating profit. […]
