We talk about why black beans are such nutritional powerhouses — rich in plant-based protein, fiber, iron, magnesium, potassium, folate, and antioxidants — and why their steady, slow-digesting energy is such a gift for our blood sugar and our hearts. I also share why I want to challenge you to try cooking dried black beans from scratch this week, instead of reaching only for the can. There's something deeply grounding about rinsing them, soaking them overnight, and simmering them slowly with onion, garlic, bay leaf, and cumin the next morning. The whole kitchen fills with warmth.
