[…] Clearly, we all do about the time constraints that it takes to do this. But I will say, that you don't have to necessarily stay up all night just to work an offset and have a great product. You could flip your cook and start cooking in the day and cook all day. You should be able to get briskets off by 7 p.m. or so and then just hold them overnight for service the next day. Yep. You can stagger cook like that instead of having to stay up all night. Staying up all night is brutal. Mm-hmm. But I think your end product is probably going to benefit from cooking on an offset versus a cabinet smoker, especially if, you know, I'm assuming you're doing briskets. […]
