Episode 3: The future of food
In this podcast. we discuss: how Bryan’s purpose began with a 2,000-mile journey across the US by foot, the importance of food (nutrition and caloric intake), plant-based diets, the “western diet” (problems with inflammation), processed foods (what does processing actually mean?), dietary problems (malnutrition and obesity), the links between obesity and the food industry, soil quality, micro nutrients and the reduction in food quality, opportunities for the future / new technologies: agriculture is quite inefficient [energy intensive], reducing the waste in food production is important, cellular food growth may be part of that solution, still some way to go with alternative foods and new technology, the consumer is still king when it comes to food choices, healthcare and food choices – a move towards promoting positive health choices when it comes to consuming food could reduce health care costs and demand on a strained system. Bryan Quoc Le Bryan is a PhD candidate in Food Science at the University of Wisconsin, Madison. He is the author of "150 Food Science Questions Answered" and is a graduate of the University of California, Irvine, where he studied chemistry. He is currently the VP of Digital and Social Media and a board member for the Institute of Food Technologists Student Association, and writes for their award-winning blog, Science Meets Food. Episode 2: Air Pollution
In this podcast, we discuss: some of the causes of air pollution and why it is such a problem; how air pollution impacts respiratory diseases including COVID 19; measuring the health impacts of air pollution; rethinking urban mobility, putting the bicycle at the centre of the solution; monitoring air pollution and putting more resources into understanding the problem; consumer-based action to mitigate air pollution and why the post-Covid recovery has improved air quality as a main component. Pippa Neill Pippa has been writing for Air Quality News both online and in the magazine for just under a year. She came to AQN with a background in environmental journalism but has quickly realised that air pollution is before anything, a health issue. Air pollution is responsible for 7 million premature deaths worldwide each year and the economic recovery from COVID-19 provides us with a unique opportunity to change the way we travel and to keep pollution down for good. Episode 1: Climate Stabilization and CO2
In this podcast, we discuss: growing up in Canada and what motivated Mike to start the website CO2.Earth; what increasing global atmospheric carbon dioxide concentrations means for humans; actions being taken globally to deal with this problem; the problem with aspirational targets, and reasons to be hopeful for the future. Mike McGee Mike McGee is a 50-something Canadian and a long-time public servant who lives and works on Vancouver Island, British Columbia. On the side, he does what he can to help people help bring an end to the out-of-control increases in greenhouse gases that keep heating the planet and acidifying the oceans. He runs the independent website, CO2.Earth, the second-longest-running website with an .earth domain. Mike has assembled a collection of stories on the lived experiences of seven senior scientists with different specializations to learn how they learned how the Earth system works. The collection is packaged as a free PDF in an engaging thesis called Learning for Planetary Habitability. The project was part of graduate work he completed in 2017 to receive a Master of Arts degree in environmental education and communication from Royal Roads University. CO2.Earth The website in particular, brings together a few big planetary numbers in a context that makes them easier to find, understand and use. The idea is to offer a way to directly track 'planetary change signals' for themselves and learn what they mean in the process. Global atmospheric carbon dioxide concentrations (CO2) in parts per million currently stand at 417ppm as of May 2020. Why is that important? This number has been steadily increasing since the start of the 20th century, but it has started shooting up since the 1970’s. It’s a number that should worry people. Even if CO2 emissions reduce slightly, year on year, and leaving aside seasonal variations, this number will continue to increase; and with it, increased climate change, extreme weather events and warmer average global temperatures.
