北京人话北京 第一季06期-炸灌肠
<p style="color:#333333;font-weight:normal;font-size:16px;line-height:30px;font-family:Helvetica,Arial,sans-serif;hyphens:auto;text-align:justify;" data-flag="normal"><span>欢迎您收听</span><span>vcradio</span><span>爱生活特别策划《北京人话北京》节目，今天是我们第一季老北京吃食系列这个主题的最后一期节目了，我们今天就来聊聊炸灌肠吧。</span></p><p style="color:#333333;font-weight:normal;font-size:16px;line-height:30px;font-family:Helvetica,Arial,sans-serif;hyphens:auto;text-align:justify;" data-flag="normal"><span>炸灌肠也是一种老北京特有的传统风味小吃，讲究用猪大肠中炼出的油炸制，因此正宗的炸灌肠闻起来总有一股猪大肠的特殊味道，但人们出于健康的考虑已经很少用猪大肠油来炸灌肠，一般采用羊肉或植物油。</span></p><p style="color:#333333;font-weight:normal;font-size:16px;line-height:30px;font-family:Helvetica,Arial,sans-serif;hyphens:auto;text-align:justify;" data-flag="normal"><span>很多刚到北京的游客一听说炸灌肠就会误认为这是一道荤菜，想着都有些重口味。其实这道菜并不是大家想象的那样，这里所说的炸的这个灌肠是用淀粉加上红曲和香料灌在猪小肠中成型，而现在随着人们对于健康和口味的需求，在灌肠的制作工艺中已经将红曲和小肠都省去了，仅仅是用绿豆淀粉加香料灌制成型的一个长长的淀粉肠。</span></p><p style="color:#333333;font-weight:normal;font-size:16px;line-height:30px;font-family:Helvetica,Arial,sans-serif;hyphens:auto;text-align:justify;" data-flag="normal"><span>我们要是追溯这炸灌肠的历史的话，早在明朝刘若愚所著《明宫史》中就有记载。清光绪年间福兴居的灌肠在京城小有名气，福兴居的掌柜被称为</span><span>"</span><span>灌肠普</span><span>"</span><span>，传说其制作的灌肠为慈禧所爱。最初的灌肠是用猪大肠灌制进淀粉、碎肉制成的，后来随着历史的发展，灌肠的制作工艺发生了变化。</span></p><p style="color:#333333;font-weight:normal;font-size:16px;line-height:30px;font-family:Helvetica,Arial,sans-serif;hyphens:auto;text-align:justify;" data-flag="normal"><span>炸灌肠的时候须要先将成型的灌肠切片，讲究点的师傅会切成一边薄一边厚的片，因为早先时候饼铛都是有个角度的，这样在饼铛里的油就会集中到一边，将切好的灌肠放入饼铛，边剪边炸，最终出锅的灌肠是一面焦香，一边软糯，可谓外焦里嫩。浇上拌好的盐水蒜汁趁烫吃。</span></p><p style="color:#333333;font-weight:normal;font-size:16px;line-height:30px;font-family:Helvetica,Arial,sans-serif;hyphens:auto;text-align:justify;" data-flag="normal"><span>您可别小瞧这炸灌肠，认为是一道极其简单的吃食，可真要是做得好吃也不是件容易的事，只要是打着北京菜的饭馆菜单里都会有炸灌肠这道菜，凭心而论正不正宗一吃便知道。现在专心做炸灌肠的小铺是越来越少了，下面就给大家推荐几家。</span></p><p style="color:#333333;font-weight:normal;font-size:16px;line-height:30px;font-family:Helvetica,Arial,sans-serif;hyphens:auto;text-align:justify;" data-flag="normal"><span>丰年灌肠，应该也算老字号，深究起来不过</span><span>50</span><span>来年历史。解放后公私合营，将原来做灌肠的小摊贩纳入国营单位，有了丰年灌肠。最早在隆福寺街里，一个不太敞亮的小店，贴着白瓷砖的墙面，码五六张桌子。菜单上有生熟灌肠，生的论斤，熟的论盘儿。现在因为种种原因在北京的雍和宫和前门都有店铺。</span></p><p style="color:#333333;font-weight:normal;font-size:16px;line-height:30px;font-family:Helvetica,Arial,sans-serif;hyphens:auto;text-align:justify;" data-flag="normal"><span>老于灌肠特别强调用猪油煎，所以油脂香特重，也很脆，初入口是极爽的。对丰年，老于颇不屑，他会问你在哪吃过灌肠。如果在丰年吃过，在你买的之外，会额外单炸一片。这一片仿佛倾注老于多年功力的灌肠，他看着你吃下，紧跟着很期待地问一句是不是特牛。看着老于的眼，听着老于演讲，似乎这片灌肠也真的格外好吃。</span></p><p style="color:#333333;font-weight:normal;font-size:16px;line-height:30px;font-family:Helvetica,Arial,sans-serif;hyphens:auto;text-align:justify;" data-flag="normal"><span>好，今天我们就聊这么多吧，很感谢您收听我们</span><span>vcrido</span><span>爱生活特别策划的《北京人话北京》节目，下周的节目我们将对于第一季节目进行小结，同时为你介绍我们第二季所要制作的主题，如果您有什么建议可以通过电子邮件告诉我们，我们也会在下周的节目中和您交流。电子邮件地址是：</span><span><a style="color:#4990E2;text-decoration:none;"><span>vcrdio@126.com</span></a></span></p><span><br></span><br>
