今回のテーマは「ジンギスカン②」、ゲストは北海道遺産ジンギスカン応援隊 隊長本田美穂子さんです。
今回のテーマは、 道民のソウルフード 『ジンギスカン』。主に、ヒツジの肉と野菜を、中央がもりあがった金属の鍋で焼いて食べる北海道の郷土料理。ですが、肉を焼いてからタレをつけて食べる「後付け」、肉をタレに漬けこんでおく「味付き」に始まり、肉も、ラム、マトン、丸く形を整えた「ロール肉」。調理も、焼く、煮る、網焼き。使うお鍋も調理方法やシチュエーションによって変わってきます。各地域、各家庭によって、「ジンギスカン」のスタイルは様々。道民に深く浸透している「ジンギスカン」は、北海道遺産にも選ばれています。今回も、北海道遺産ジンギスカン応援隊 隊長本田美穂子さんにお話を伺います。

今回のテーマは、 『越冬野菜』。越冬野菜は、主に、冬の寒さや雪を利用して低温保存をした野菜のことで、雪下(ゆきした)野菜、雪中(ゆきなか)野菜など、様々な言い方があります。北海道のような雪国ならではの特産品で、特徴としては、甘みが増す、と言われています。道内では、和寒町の越冬キャベツが有名です。今回も、藤女子大学の教授で、生鮮食品の鮮度を保つ方法や鮮度評価、健康成分の測定などを研究している 深井原 （ふかい・もと） さんにお話を伺います。
